Finnegan’s Cake

Guinness ice cream, filled with soft Guinness cake and rippled with Jameson whiskey caramel.

The kitchen cooks down Guiness Stout to intensify the flavor notes of malted barley,chocolate and roasted coffee before being added to our custard base. Soft chocolate Guiness cake is soaked with the Jameson Whiskey caramel, increasing the richness and retaining a soft almost gooey texture. The final result is a gathering of toasty, sweet and a tinge of bitterness, a juxtaposition that could be likened to, dare I say it.... Finnegan's wake. Finnegan’s wake is an old Irish street ballad, adapted to a poem by the famous Irish poet James Joyce. Tells the story of an Irishman, known for being fond of whiskey. Presumed dead, was revived at his own wake when, during the festivities, he is splashed with Whiskey & Porter.
