Basque Cheesecake

Originated in San Sebastián in the Basque region of Spain. Basque Cheesecake is charachterized by a deeply caramelized exterior and a velvety smooth interior. Thanks to the maillard reaction, the exterior of the creamy cheesecake transforms into a bold and balanced crust with notes of bitter sweet caramel. We set it off further with the bright sweetness and acidity of our strawberry balsamic jam.

Velvety smooth mascarpone ice cream, with cubes of generously caramelized “Basque Style” cheesecake  complemented by a bright swirl of house-made strawberry balsamic jam.
